"In September 2003, after the harvest, I went to visit my friend, the late Denis Mortet, in Gevrey Chambertin. He left me to contemplate the open vats into which the pressed grapes had been conveyed. Over the course of 15 days, I noted in my sketchbook the different nuances of colour as the composition of the mixture changed day by day. I was captivated by what I saw, and this fascination with a natural but inexplicable phenomenon - the transformation of the juice into wine, has stayed with me ever since. It is the essence of creation - whereby two things merge together and become something different."
